- Can I use sorghum flour the same as all-purpose flour?
Because our sorghum flour is gluten free, it may not have the same rise and texture as all-purpose flour in certain baked goods. Our flour is also coarser than common all-purpose flours. Some people use xanthan gum as a "binder" in place of gluten. We recommend adding a half a teaspoon of xanthan gum for each cup of sorghum flour if you're making cookies or cakes, and one teaspoon for each cup of flour if you're making bread. In this way, our sorghum flour is very similar to other sorghum flours available.
